Ingredients
- 1 lb. asparagus
- 4 eggs
- 2 oz butter
- Parmesan cheese
- Salt & pepper
Instructions
- Trim the woody ends off the asparagus.
- Put salted water to boil in a large pot, then throw in the asparagus and cook for 2-3 minutes until they are tender. Drain well and set aside.
- Heat up the butter in a pan, and fry and season the eggs. Make sure that the yolk is still runny.
- Plate the asparagus, drizzle with olive oil, add salt and pepper, and grate parmesan cheese generously on top. Gently place the eggs on top of the asparagus and grate more cheese on top. Done! Serve immediately.
