Asparagus, prosciutto and mozzarella rolls

We use store-bought puff pastry for this recipe every time we make it. It works wonderfully, saves so much time, and spares you from the cleanup process after making dough at home. To be on the safe side, roll out the dough and try to measure how many squares you can cut. The asparagus can be rather long, so try to be generous with the size of the squares.

Asparagus, prosciutto and mozzarella rolls

The recipe uses mozzarella because its mild flavor blends perfectly with the light bitterness of the asparagus and the saltiness of the ham. That being said, if you buy mozzarella in brine, it will be rather wet, so you risk making your rolls a bit soggy. In this case, just use less cheese than the recipe calls for; two-thirds should be fine. If you use grated mozzarella, there should be no issue. Enjoy your asparagus, prosciutto and mozzarella rolls!

Ingredients

  • 1 lb asparagus
  • 6 slice prosciutto
  • 10 oz puff pastry
  • 5 oz grated mozzarella
  • 1 egg
  • olive oil
  • salt and pepper

Instructions

  • Cut the mozzarella into small cubes.
  • Cut off the ends of the asparagus, trying to make them be similar in length. Then put them in a bowl and mix them with olive oil, salt and pepper.
  • Unroll the puff pastry and cut into six squares. Ours were roughly 5×5 in.
  • Beat an egg in a small bowl.
  • One by one, place the squares on a baking tray. Place one slice of prosciutto diagonally across the square of puff pastry, then place three or four asparagus, and cover with mozzarella.
  • Gently fold two corners of the puff pastry square over the cheese and press them lightly to stick them together. Use egg if the pastry is not sticky enough. Repeat these two steps for the rest of the squares.
  • Brush the beaten egg on the rolls, and sprinkle some sesame seeds if you wish.
  • Preheat the oven to 400℉ and bake the rolls for 20 min or until they are cooked and golden.
