Creamy Tuscan shrimp

This recipe is fairly easy to make but it requires focus. Once you start cooking it goes pretty fast, so it is important to prepare your ingredients beforehand. Chop everything that needs chopping and have all the ingredients and seasonings at hand before you start frying the shrimp. If the shrimp do not fit in your pan in a single layer, cook them in batches. This way you will avoid having shrimp cooked too much or unevenly.

You can eat the creamy Tuscan shrimp over pasta or simply with some bread. Just be sure to serve immediately after cooking. We suggest to serve with fresh salad on the side to lighten the meal.

Creamy Tuscan shrimp

Ingredients

  • 1 lb. shrimp (peeled and deveined)
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 4 garlic cloves
  • 1/2 cup sun-dried tomatoes
  • 4 oz fresh spinach
  • 1/2 tsp Italian seasoning
  • 1 tbsp olive oil (or oil from the sun-dried tomatoes)
  • 1 tbsp butter
  • Salt & pepper

Instructions

  1. Prepare all your ingredients: chop the garlic, grate the Parmesan cheese, chop the sun-dried tomatoes, and peel and devein the shrimp.
  2. Heat the oil and butter in a large pan over medium heat. Fry the garlic for 30 seconds, and add the shrimp to the pan and season it with salt and pepper. Cook for 2-3 minutes per side until the shrimp are pink. Make sure the pan is not too crowded. Remove them and set aside on a plate.
  3. Add the heavy cream, sun-dried tomatoes, Italian seasoning, Parmesan cheese and salt and pepper and mix everything well. Cook for a few minutes until the sauce thickens.
  4. Stir the spinach into the sauce and cook for a couple of minutes until it wilts. Add the shrimp back to the pan and coat with the sauce. Done! Serve immediately with bread or pasta.
