Chicken fajitas! A flavorful mix of chicken and vegetables that just works wonderfully and is super fun to eat in wraps or on their own. But perhaps what’s best about fajitas is that they are one of those recipes that are perfect to garnish with all sorts of delicious toppings: guacamole, hot sauce, jalapenos, lime juice, sour cream, and so much more!
Fajitas are very easy to make, and the preparation mostly consists of simply slicing the ingredients. Remember that you don’t need to chop anything into very small pieces: long stripes work well for the vegetables and the chicken.
Family dinners are the perfect setting for a fajita feast! The best way to make it work is to plan a bit ahead how to tackle the preparation: which toppings don’t need any work other than platting, what can be made while the chicken is on the pan, when to make the guacamole, and so on. Flavorful chicken fajitas
Ingredients
- 2 large chicken breasts
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 1 tsp cumin
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- ¼ tsp cayenne pepper
- 2 tbsp vegetable oil
- salt and pepper
- fresh cilantro for garnishing
For serving
- tortillas
- guacamole
- hot sauce
Instructions
- Cut the chicken breasts into long stripes. Season with cumin, smoked paprika, garlic powder, cayenne pepper, salt and pepper.
- Cut the bell peppers into long slices and then cut them in half. Cut the onion in half and then slice it thinly.
- Heat the vegetable oil in a large skillet. Add chicken and cook it until it is golden and cooked through (5-7 minutes). Then add bell peppers and onion. Cook for a few more minutes. Adjust seasoning before serving.
- Serve with warm tortillas, guacamole, hot sauce, fresh cilantro and your other favorite toppings.
