If you’re a fan of quick and delicious chicken recipes, this garlic Parmesan chicken will become your new favorite. If you prefer to cook the whole chicken breast without cutting it into two thinner pieces, you are most welcome to do so! We suggest cutting it because it makes it much easier and faster to cook and reduces the risk of over- or undercooking. Else, the recipe can also be made with boneless chicken thighs instead of breasts. This should make it a little bit easier to cook since you won’t need to cut them in half and also more flavorful. Just keep in mind that chicken thighs are more fatty than breasts, so you may want to use a lighter cream.

Garlic Parmesan chicken

The recipe calls for three fatty ingredients: olive oil, butter and cream. You may lightly adjust the amounts or ratios of each to your preference, but be particularly careful with how much olive oil you use, since it is flavorful and may change the dish too much. You can use either heavy or light cream as you prefer, but use mildly flavored cream and avoid those with stronger flavors, such as sour cream.

Finally, the garlic Parmesan chicken is best served with a side that can be eaten with the sauce, such as rice or mashed potatoes, and with something green and fresh to contrast richness of the sauce (like our easy spinach salad). You’ll get a delicious and perfectly balanced meal!

Garlic Parmesan chicken

Ingredients

  • 2 chicken breasts (large)
  • 3 garlic cloves
  • 1 tbsp butter
  • 1 tbsp flour
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup cream
  • 1/2 cup Parmesan cheese (grated)
  • 1 tbsp olive oil
  • Fresh parsley (for garnishing)
  • Salt & pepper

Instructions

  1. Cut the chicken breasts in half so you have four thinner pieces. Season with salt & pepper. Finely chop the garlic.
  2. In a large skillet, add the olive oil and butter over medium-high heat. Add the chicken and cook for 3-5 minutes per side until golden and cooked through. Remove from the skillet and set aside.
  3. Add the garlic and the flour to the pan and mix well. Fry for 30 seconds, add the chicken broth, mix very well, add the cream, and mix again. Cook for a minute or two until the sauce is thick, then turn off the heat.
  4. Stir in the Parmesan cheese and mix until it melts completely. Add the chicken back to the pan and cover with sauce. Done! Garnish with fresh parsley.
