The combination of flavors in rhubarb and apple crumble creates a delicious sweet and sour treat that is incredibly tasty. Plus, the crunchiness of the crumbs makes every bite super comforting and enjoyable. We truly fell in love with this dessert!

Just like when making apple crumble, the key to success is to use the right variety of apples (we used Pink Lady). Preferably, use a sweet and only slightly tart (if at all) variety, not one that is sour or very tart. Also, keep in mind that some varieties tend to get mealy when baked, so your best bet is to use a variety that you have baked before.
It is important to get the crumbs right: not too dry, not too wet. To check if the consistency is on point, press the crumbs into a ball in your hand: if you can make a ball and it crumbles with a bit of pressure, you are good to go. If you cannot form a ball, add more butter. Or, if it doesn’t crumble back, add more flour.

Finally, feel free to throw in some chopped almonds! The extra crunch and nutty flavor will make your rhubarb and apple crumble extra splendid. Just sprinkle them on top after the crumbs and throw into the oven.

Ingredients
- 1 lb. rhubarb
- 3 apples
- 1/2 cup white sugar
- 1/2 tsp vanilla sugar
- 1 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 4 oz butter (optional: vegan butter)
Instructions
- Preheat the oven to 350 ℉ (180 ℃) with convection (fan).
- Cut the rhubarb and the apples into bite-sized pieces.
- Place the rhubarb and apples in a baking dish, add the white sugar and vanilla sugar and mix well to cover the fruits thoroughly.
- Bake the fruits in the oven for 10 minutes.
- In the meantime, mix the flour and brown sugar in a large bowl, and rub in the butter to form crumbs. To check if the consistency is right, press the crumbs into a ball in your hand: if you can make a ball, and it crumbles with a bit of pressure, you are good to go. If you cannot form a ball, add more butter. Or, if it doesn’t crumble back, add more flour.
- When are 10 minutes have passed, take out the baking dish and spread the crumbs on top. Put the dish back in the oven and bake for 30 to 35 minutes. Done!
