This salad is pretty much fail-proof since there’s no cooking involved and there aren’t any tricky steps. That being said, this recipe tastes best when you use sweet, bright red and tasty strawberries. Strawberries are the star ingredient in this recipe, as it is their sweetness and color that really add flavor complexity and beauty to the strawberry and spinach salad, so try to use the best you can find!

It is fine to make a different dressing if you are missing the ingredients, but we strongly advise that you dress the strawberry and spinach salad at least with olive oil and/or balsamic vinegar. Otherwise, your salad will be very dry and not so enjoyable.
If you are short on time, you can skip toasting the almonds. However, toasting almonds, cashews, and other nuts and seeds helps to really awaken their flavor and even brings out some nuances that won’t be there otherwise. For this reason, we recommend that you take the extra few minutes and toast the almonds. You won’t regret it!

Feta cheese is a tangy, salty cheese with a crumbly texture. Originally from Greece and made with sheep milk (sometimes mixed with goat milk), it has been a staple ingredient in Mediterranean cuisine for centuries. It is generally considered healthy, with high content of protein and lower in fat than other types of cheese. It is, however, high in salt, so keep that in mind if you are trying to reduce your salt consumption.
There’s one thing to keep in mind when replacing Feta cheese in a recipe: while Feta and fresh Mozzarella cheese are arguably the most popular options for salad, they are in no way interchangeable! They have completely different flavor, with Feta being salty and Mozzarella being mild and milky. If you cannot get Feta cheese where you are, in some places a similar option can be found known as “salad cheese”, which has similar texture and flavor.
Ingredients
For the salad
- 6 oz fresh spinach
- 7 oz crumbled feta cheese
- 8 large strawberries
- 1/2 small red onion
- 1/2 cup toasted almonds
For the dressing
- 1 tbsp balsamic vinegar
- 3 tbsp olive oil
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt & pepper
Instructions
- Slice the strawberries and the onion.
- In a dry frying pan toast the almonds for a few of minutes mixing continuously until they get brown edges.
- Mix all the dressing ingredients in a small bowl.
- Mix all the ingredients in a salad bowl. Done!
