The easy spinach salad is pretty much failproof. There’s nothing that needs to be cooked or requires some special preparation. There are, on the other hand, a few little tips to improve it. Cut in half any spinach leaves that look a bit large, and cut the stems of the leaves; this way they will be easier to eat (don’t throw them away!). Also, you may slice the radish into thin slices or chop it into little pieces, but try to avoid leaving big chunks, since radish can sometimes be very powerful.
Always remember the golden rule: your dish can only be as good as your ingredients! There aren’t many ingredients here to build up an intense flavor, so it is important that you use the tastiest vegetables you can find, and that you garnish your salad generously. And, as always, try to use very fresh vegetables in your salad 🙂

It is fine to skip the lemon if you don’t have it at hand or you don’t like it, but we strongly advise that you dress the easy spinach salad with at least some olive oil and/or balsamic vinegar. Otherwise, your salad will be very dry and not so enjoyable. You could try making the dressing in our strawberry and spinach salad! Otherwise, some pesto is sure to give excellent results, too. Feel free to use your favorite dressing!

- 4 oz fresh spinach
- 6 oz cocktail or cherry tomatoes
- 2 oz radish
- 1/2 cucumber
- 1/2 bell pepper
- Olive oil
- Lemon juice
- Salt & pepper
Instructions
- Wash all the fresh ingredients.
- Chop the tomatoes, cucumber, radishes and bell pepper into small pieces.
- Dress with lemon juice, olive oil, salt and pepper to your preference and mix everything in a bowl. Done!
