This summer couscous with nectarine is a bright, refreshing salad that perfectly captures the flavors of the season. Sweet, juicy nectarines pair beautifully with fluffy couscous, herbs, and a light lemon dressing for a dish that’s both elegant and easy to make. This recipe is nearly failproof. Mostly you just need to chop the ingredients and mix them in a bowl. The only cooking that is needed is for the couscous, and even that is very simple. Typically, all it takes is to stir the couscous into boiling water and let it rest for 10 minutes while it absorbs the water. Simply follow the instructions in the package and it should be fine.

It’s perfectly fine to use a bit more of this and less of that, so don’t worry too much about following the recipe to the line. The only ingredients to be careful with are the onions, mint and basil: if you are not sure how much to use, favor using less rather than more, since these ingredients can be powerful.

Ingredients

  • 1 cup couscous
  • 2 nectarines (or peaches)
  • 7 oz cherry tomatoes
  • 1/2 cucumber
  • 1/4 red onion (finley chopped)
  • 1 cup sweet corn kernels (can be canned or frozen)
  • 3 oz fresh spinach
  • 1 tbsp fresh mint
  • 1 tbsp fresh basil
  • lemon juice
  • olive oil
  • salt & pepper

Instructions

  1. Cook the couscous following the package instructions.
  2. Chop the nectarines, cucumber, tomatoes, and onions, and chop some fresh basil and mint.
  3. In a large bowl, mix all the ingredients: couscous, spinach, nectarines, cucumber, tomatoes, onions, sweet corn, and herbs, and dress with lemon juice, olive oil, salt and pepper to taste. Toss everything together. Done!

Notes

  • The recipe is for 6 servings.
  • Prep time: 15 minutes.
  • Cooking time: 5 minutes.
  • You can substitute the nectarines with peaches.
