This French carrot salad is a simple yet elegant dish that celebrates the beauty of fresh, crunchy carrots. There is not much to say about this recipe, since it is nearly failproof. Just be sure to grate, not chop, the carrots, so that it soaks well in the dressing. Also, chop the green onions finely, since their flavor can be very strong and cause some unpleasant bites.

Although we didn’t add them, some nuts would work perfectly well in this recipe. Try adding some chopped almonds or even peanuts if you wish. Raisins would work too, but they will significantly change the salad. Finally, you can make your french carrot salad by replacing the honey with your preferred substitute for it.

Ingredients
- 1 lb. carrots
- 2 green onions
- 2 tbsp chopped fresh parsley
For the dressing
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 tsp honey
- 1 tsp Dijon mustard
- salt & pepper
Instructions
- Peel and grate the carrots, and finely chop the green onions and fresh parsley.
- Whisk together all the ingredients for the dressing in a small cup.
- Mix together the salad and the dressing in a large bowl. Done!
