French carrot salad

Ingredients
  

  • 1 lb. carrots
  • 2 green onions
  • 2 tbsp chopped fresh parsley
Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • salt & pepper

Method
 

  1. Peel and grate the carrots, and finely chop the green onions and fresh parsley.
  2. Whisk together all the ingredients for the dressing in a small cup.
  3. Mix together the salad and the dressing in a large bowl. Done!

Notes

  • If you wish to make it vegan, you can use maple syrup, agave syrup, or your preferred substitute for honey.
