This chicken and vegetables pie is a wonderful option for a cozy dinner, and it is as tasty and enjoyable as it looks. This dish is easy to make but it does take a bit of prep and cooking time, so it’s perfect for a cooking evening with your loved ones, maybe even with a glass of wine 😉
We often use a pre-made seasoning mix for chicken when we make this pie, but for this recipe we combined a few spices to season the chicken. You are more than welcome to adapt the seasoning as you prefer. If you don’t like garlic, skip the garlic; if you want some heat, add cayenne pepper: it’s up to you!
We use store-bought pie dough for our chicken and vegetable pie, simply because it works wonderfully, saves so much time, and spares you from the cleanup process after making dough at home. This recipe and the one for egg and spinach pie both work perfectly well with store-bought dough.
It is important to whip the eggs very well to get air into them. This will help you get a fluffy and beautiful pie. If you are into spicy food, bring some Sriracha sauce to add to your plate at the table. Its heat and garlicky flavor work great with this pie 🙂
This pie is pretty close to being a full meal by itself, but we suggest to complement it with a very light and fresh salad. A simple leaf salad with a light dressing should do the job.

Chicken and vegetables pie
Ingredients
- 1 pack store-bought pie dough
- ¾ lb chicken breast
- ½ red bell pepper large
- ½ broccoli
- ½ cup green peas
- ½ small onion
- 5 eggs
- 2 tbsp milk
- ⅛ tsp sweet smoked paprika
- ¼ tsp turmeric
- ¼ tsp ground cumin
- ¼ tsp garlic powder
- 2 tbsp olive oil
- salt and pepper
Instructions
- Chop the red bell pepper, broccoli, and onions into small pieces.
- Cut the chicken breasts into small cubes. Add salt, pepper, sweet smoked paprika, turmeric, cumin and onion powder, or use your favorite chicken spices.
- Place the pie dough into a baking form (if the dough comes with baking paper, you can use it, otherwise put oil or butter on the baking form) and cut off any edges sticking out. Poke holes into the dough using a fork.
- Preheat the oven to 360℉ (180℃). Once it is ready, bake the dough for 10 to 12 minutes.
- Add olive oil to a large frying pan and cook the chicken until golden. Right before the chicken is ready, add onions and cook for a couple of minutes.
- In a bowl, beat the 5 eggs and add a splash of milk.
- When the dough is ready, fill it with the chicken and vegetables, and pour the beaten eggs in. Add salt and pepper.
- Put the pie back in the oven and bake until it is ready (check if the egg is cooked in the middle of the pie). It should take 25 to 30 minutes.
