The first time we found this recipe we were a bit hesitant to try it, since it seemed like the flavors may be too strong. Now we can’t get enough of it! The capers and lemon create a delicious balance that, while strong, is far from overwhelming. We hope you will give this recipe for chicken with capers and lemon a try!

Capers are one of those ingredients that divide people. Some love them and can eat spoons full of them, while others prefer them in very small amounts. We are obviously part of the former group, so we use a generous amount of capers in this recipe. Enough that we can be sure there will be at least one or two capers in every bite. Just so you know 🙂

The one ingredient that requires a bit more care in this recipe is lemon, simply because of personal preferences. We use a moderate amount of lemon juice, but you may want to first add only half the amount while cooking the sauce and taste it, then decide how much more you want to add. Else, if you want to play it safe, use only half the amount of lemon juice and then add slices of fresh lemon when serving. That way everyone can adjust to taste. Ingredients

  • 2 chicken breasts
  • 2 tbsp butter
  • 3 tbsp capers
  • 2 tbsp olive oil
  • 2 cloves garlic
  • ½ cup chicken stock
  • 1 lemon
  • salt and pepper
  • fresh parsley for garnishing

Instructions

  • Cut chicken breasts in a half inch slices. Season with salt and pepper. Heat olive oil in a large frying pan. Add chicken and cook on both sides until it is golden and cooked through. Remove the chicken from the pan.
  • To the same pan add butter and garlic. Cook for 30 seconds and add drained capers. Pour chicken stock, squeeze in about 2 tbsp of lemon juice and cook for a few minutes. Then return the chicken to the pan and cook for a couple of minutes. Taste whether you want to add more lemon juice. Garnish with fresh parsley and serve with rice or pasta.

Notes

  • You can use chicken thighs instead of chicken breast. Thighs are a bit more juicy than breast, but they have a bit more fat.
