This cucumber salad is the ultimate refreshing side dish for warm days. With crisp cucumbers, a light dressing, and a hint of herbs, it’s simple, delicious, and ready in minutes. Even though the prep time is marked as 25 minutes, this salad really only takes 5 minutes to make. The other 20 minutes are needed to let the cucumbers sweat out moisture, so it’s basically free. Be sure to drain well your cucumbers after you rinse away the salt.

Avoid using other types of onion for the cucumber salad. Red onions are milder than others, so they are particularly good for eating raw or lightly pickled. Slice your onion very thinly to make sure the vinegar can soften its texture and flavor.

Ingredients
- 2 cucumbers
- 1/2 red onion
- 2 tbsp white wine vinegar
- 1 tsp honey
- 2 tbsp chopped fresh dill
- salt & pepper
Instructions
- Slice the cucumbers thinly, place them in a bowl and toss them with a generous amount of salt. Let them sit for at least 20 minutes.
- In the meantime, slice the onion thinly, chop the dill, and mix vinegar, honey and some pepper in a small cup.
- When the 20 minutes have passed, rinse and drain the cucumbers well, and toss all the ingredients together. Taste for salt and adjust to your liking, then transfer to a salad bowl and leave the liquid behind. Done!
