We love soups. They are warm, tasty, and easy to fix should you add too little or too much of something. This vegetable soup is particularly easy to make and hard to miss, but what’s best about it is that it is the perfect solution for that last day before your next trip to the grocery store. All you need is to keep a bag of frozen vegetables in the freezer and two or three potatoes!
Of course, you can use fresh vegetables if you have them. We enjoy the process of chopping all the ingredients so we sometimes make this soup with fresh vegetables, but more often than not we use frozen veggies. They are extremely practical and affordable, so we always have some in the freezer.
The secret to making this vegetable soup tasty is to use the right spices and seasoning. It works best if you use good quality stock. Chicken or vegetable cubes do the job well, but if you can use the little cups of stock jellies, or if you make your own, you can bring this soup to the next level.
By the way, blending this soup works great! For our recipe we didn’t blend it so you could see the vegetables in our mix, but you can use a hand blender. Between the vegetables and the potatoes, you end up with a thick, almost creamy texture, and the resulting flavor is very pleasing.
Finally, this is a great soup to enjoy your favorite seasonings. We often add chili oil to it when we want our vegetable soup to pack a punch, or we add olive oil when we are in the mood for a milder taste.

Easy vegetable soup
Ingredients
- ½ small onion
- 1 lb frozen vegetable mix
- 3 medium potatoes
- 1 chicken or vegetable stock cube
- 2 tbsp olive oil
- fresh parsley for garnishing
Instructions
- Peel and cut potatoes in small cubes. Heat 2 tbsp of olive oil in a large saucepan. Add finely chopped onion and cook for a few minutes until it becomes soft and transparent. When the onion is cooked, add the frozen vegetable mix and potatoes. Pour around 3 cups of water (the vegetables should be fully covered, so add more if needed). Throw in a vegetable or chicken stock cube and bring it to boil. Adjust the seasoning by adding salt and pepper. Let it simmer for 10-15 minutes or until the potatoes are cooked. Serve with fresh parsley on top and bread.
