Our recipe for gnocchi with Gorgonzola and spinach is perfect for a classy, romantic dinner, or to impress your guests with a fancy meal, and it only takes a few minutes to cook. You won’t believe how fast it comes together. Seriously!

You can use frozen spinach for this recipe if you prefer. It is super convenient and perfectly fine, so we will basically never advise against it. That being said, if you can find fresh, full spinach leaves, we encourage you to use them. This way your dishes will look gorgeous and classy on the table.

This recipe is pretty easy and fast to make but it takes a bit of focus. Gnocchi cook in just a couple of minutes and should preferably not be left resting, so you’ll need to time it with the preparation of the sauce. So, prep all your ingredients and have a pot with water ready on the stove before you start cooking any ingredients. This way you will avoid some last moment cutting, washing, or having to rush to the fridge
Gnocchi can be a bit deceitful! They are very hearty and will make you satiated sooner than you expect, so it’s better to serve small portions. Also, a fresh salad on the side works wonders to balance the thickness and richness of the gnocchi with Gorgonzola and spinach.

Ingredients
- 1 lb. gnocchi
- 1/2 cup cooking cream
- 3 oz Gorgonzola (or other blue cheese)
- 3 oz fresh spinach
- 2 tbsp grated Parmesan
- 1/2 cup walnuts
- Salt & pepper
Instructions
- Put water to boil in a pot and cook the gnocchi according to the instructions in the package. Right at the end, add the spinach to the pot and blanche them quickly. Drain the gnocchi and spinach, and reserve a cup of water.
- In a sauce pan, add the cream, blue cheese and Parmesan and heat gently while mixing until the cheese dissolves. Add some of the reserved water if the sauce is too thick. Add salt and pepper to taste.
- Add the gnocchi and spinach to the pan and mix gently. Done!
- Serve and sprinkle the walnuts on top.
