Gnocchi with Gorgonzola and spinach

Ingredients
  

  • 1 lb. gnocchi
  • ½ cup cooking cream
  • 3 oz Gorgonzola or other blue cheese
  • 3 oz fresh spinach
  • 2 tbsp Parmesan grated
  • ½ cup walnuts
  • Salt & pepper

Method
 

  1. Put water to boil in a pot and cook the gnocchi according to the instructions in the package. Right at the end, add the spinach to the pot and blanche them quickly. Drain the gnocchi and spinach, and reserve a cup of water.
  2. In a sauce pan, add the cream, blue cheese and Parmesan and heat gently while mixing until the cheese dissolves. Add some of the reserved water if the sauce is too thick. Add salt and pepper to taste.
  3. Add the gnocchi and spinach to the pan and mix gently. Done!
  4. Serve and sprinkle the walnuts on top.

Notes

  • It is a simple recipe but it goes fast when cooking. So, have all your ingredients ready.
