There are plenty of options for the forest mushrooms: you can buy them fresh, dried, frozen, or even forage them yourself! It is hard to go wrong with the flavors so use whichever mushrooms suit you best, but be sure to clean them well. Particularly dried mushrooms, since they sometimes have a bit of dust or soil in them, which can be felt when eating them and can be off-putting.

We used store-bought mezzelune with a ricotta and spinach filling for our mezzelune with forest mushrooms. Other fillings would also work fine, such as cheese or ham, so the choice is up to you. However, try to stick to flavors that are relatively mild and which won’t overpower the mushrooms. Also, if you cannot find mezzelune or you simply prefer tortellini, these would be perfectly fine, too.

Mezzelune with forest mushrooms
Ingredients
- 1 lb mezzelune
- 3 tbsp butter divided
- 1 tbsp olive oil
- 10 oz forest mushroom mix frozen
- 2 garlic cloves minced
- ¾ cup grated Parmesan cheese
- 1-2 tbsp fresh parsley
- salt and pepper
Instructions
- In a medium sized pot, put water to boil. Once it is boiling, add the mezzelune and cook according to the instructions in the package (typically around 5 minutes).
- Heat up 2 tbsp of butter and 1 tbsp of olive oil in a large pan and add the forest mushroom mix.
- Cook the mushrooms for around 5 minutes until they become slightly brown.
- Drain the mezzelune when they are ready. Then, add the garlic and 1 more tbsp of butter to the mushrooms, cook for 30 seconds.
- Add the mezzelune and parmesan cheese, and toss to coat everything nicely. Season with salt and pepper. Serve immediately and garnish with fresh parsley and more parmesan cheese if you wish.
