Mushroom tortellini is a comforting and tasty dish that combines subtle, delicate flavors and is quick and easy to make. It’s a perfect little treat!

This is a fairly simple and easy recipe, since basically you will make a sauce while the tortellini are cooking. The main thing to take care of is the thickness of the sauce. If you think that it is getting too thick, or that there is not enough sauce, feel free to add either a bit of water or more cream. We try to keep our recipes with a low-fat content and list the ingredients accordingly, but it’s up to you how creamy you wish to make the dish.

We use store-bought tortellini for this recipe, which you can usually find with a variety of fillings: spinach and ricotta, ham and cheese, mushrooms, and so on. Don’t worry about it and choose whichever sounds best to you. Usually the flavor is mild, so it is very unlikely that it would clash with the other flavors in your mushroom tortellini.

If you don’t have fresh spinach, it is perfectly fine to use frozen spinach. Just make sure to defrost it well in advance so it is not cold anymore when you add it to the sauce, and squeeze out some water before adding it to the pan.
Ingredients
- 8 oz mushrooms
- 1/2 yellow onion
- 2 garlic cloves
- 9 oz tortellini
- 4 oz fresh spinach
- 2 tbsp olive oil
- 1/2 cup cooking cream
- 1/4 cup grated Parmesan cheese
- Salt & pepper
Instructions
- Slice the mushrooms and chop the onion and garlic.
- Start cooking the tortellini according to package instructions.
- Heat the olive oil in a sauce pan and fry the mushrooms until they are brown and tender (about 5 minutes). Add salt & pepper.
- Add the onions and fry for a few minutes until soft. Then, add the garlic and fry for 30 seconds.
- Reduce the heat and add the cooking cream, Parmesan cheese, and spinach. Stir carefully until the spinach is wilted (about 3 minutes). If the sauce is too thick, add a bit of water from the tortellini.
- Add the tortellini and stir carefully to cover with the sauce. Done!
