Oranges are the most important ingredient in this recipe, as it is their sweetness what really makes this salad stand out among others. So, this recipe is best enjoyed when you know you can find the sweetest oranges.
Although avocados do not take the spotlight in this recipe, we suggest you use the best ones you can find. If you have the chance to buy them at a farmer’s market, ask the merchant for avocados that will be ripe on the day you plan to make the salad (and maybe also buy a couple to make some delicious guacamole 😉 ). Else, if you can buy them ripe and ready to use, that’s usually a better bet than buying them unripe and having to time your salad to when the avocados are ready.
Avocados start to oxidize soon after being opened and exposed to air. While this doesn’t affect their flavor so much, its color changes from a beautiful bright green to a very unappetizing dark and brownish green. So, if you are bringing this salad to a gathering, we suggest you mix all the ingredients beforehand except the avocado. You can chop and mix it into the salad right before serving.
Toasting almonds, cashews, and other nuts and seeds helps to really awaken their flavor and even brings out some nuances that won’t be there otherwise. For this reason, we recommend that you take the extra few minutes and toast the almonds. You won’t regret it!

Orange, chicken and avocado salad
Ingredients
- ¾ lb. chicken breast
- 4 oz salad mix
- 1 orange
- ½ cucumber
- 1 avocado
- ⅓ cup almonds
- 4 tbsp olive oil extra virgin
- 2 tsp lime juice
- salt and pepper
Instructions
- Wash your salad mix (if needed) and put it in a large bowl.
- Chop the cucumber and the avocado into small cubes and add them to the salad. Peel the orange, slice it and add it to the bowl, too.
- Cut almonds in half and toast them in a dry pan until they turn golden brown. Stir frequently. Once they are ready, add them to the salad bowl.
- Cut the chicken into bite sized pieces, add salt and pepper. In a frying pan heat 2 tbsp of olive oil, add chicken and fry until chicken is cooked and golden.
- Add the chicken to the salad bowl. Drizzle 2 tbsp of olive oil and add lime juice. Season with salt and pepper. Mix well.
