Peanut butter cookies are, without a doubt, some of the best cookies you’ll ever have. They are so soft, chewy and flavorful, that it’s nearly impossible to eat just one. We hope you’ll give them a try!
While many recipes are quite flexible regarding quantities and sequence of preparation, this is rarely true with baking. Whether it is bread, cakes or cookies, baking is usually a very precise task, and any deviation from the recipe can lead to unpleasant results. Therefore, we strongly suggest that you follow the recipe as well as you can, at least in your first attempt.

It’s important that you let the cookies cool down for a few minutes before removing them from the baking tray. The peanut butter cookies continue to bake for a while while resting. So, if you move them right after taking them out of the oven, they will fall apart.
Of course, there are plenty of types of peanut butter. Crunchy or smooth, sweetened or not, and with lower or higher content of peanuts. We used a smooth, unsweetened peanut butter that’s nearly 100% peanuts, and we loved the result, so we suggest you use something similar.

We like the sweetness of the cookies with this recipe, but you may prefer even sweeter cookies. If you wish, you can roll the balls of dough in sugar before placing them on the baking tray. This adds more sweetness to the peanut butter cookies and a bit of texture, too.

Ingredients
- 1 cup peanut butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup butter
- 1 egg
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp vanilla sugar
- 1 pinch salt
Instructions
- In a large bowl, mix the butter, white sugar and brown sugar until creamy.
- Add the peanut butter and mix it in. Then add the egg and mix well again.
- Sift in the flour together with the baking powder and vanilla sugar. Add a pinch of salt. Mix well until you get a smooth dough.
- Preheat the oven to 350 ℉ (180 ℃) with convection (fan).
- With your hands, form little balls roughly the size 1/8 of a cup, place them on a baking tray and press them down with a fork.
- Bake the cookies for 12-15 minutes. Remove from the oven and let them cool down for 8-10 minutes before moving them.
Notes
- The recipe is for around 22 cookies.
- Prep time: 15 minutes.
- Cooking time: 10 minutes.
