Instructions
- Cook the couscous following the package instructions.
- Chop the nectarines, cucumber, tomatoes, and onions, and chop some fresh basil and mint.
- In a large bowl, mix all the ingredients: couscous, spinach, nectarines, cucumber, tomatoes, onions, sweet corn, and herbs, and dress with lemon juice, olive oil, salt and pepper to taste. Toss everything together. Done!
