Sun-dried tomato gnocchi

Gnocchi can be a bit deceitful! They are very hearty and will make you satiated sooner than you expect, so it’s better to serve small portions. Also, a fresh salad on the side works wonders to balance the thickness and richness of the sun-dried tomato gnocchi.

Our recipe makes a thick sauce with intense flavor that sticks well to the gnocchi. You may add more broth if you wish a thinner sauce, or adjust the amount and fat content of the cream to reach the consistency you prefer for your gnocchi.

Sun-dried tomato gnocchi

Ingredients

  • 1 lb. gnocchi
  • 1/4 cup sun-dried tomatoes
  • 3 garlic cloves
  • 1 tsp Dijon mustard
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup cooking cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil (from the sun-dried tomatoes)
  • Fresh basil
  • Salt & pepper

Instructions

  1. Finely chop the garlic, sun-dried tomatoes, and basil.
  2. Heat the olive oil in a large pan over medium-high heat. Add the garlic and sun-dried tomatoes and cook for 30 seconds. Stir in the Dijon mustard and chicken broth, and cook for 2 minutes.
  3. Add the cream and gnocchi to the pan. Mix well, bring to boil and reduce to medium heat. Cook for 4 minutes stirring occasionally.
  4. Add the grated Parmesan, fresh basil, salt and pepper, and cook for 2 more minutes. Done!
