Bulgur, spinach, and mozzarella salad

Ingredients
  

  • 4 oz fresh spinach
  • 1 cup bulgur
  • 5 oz fresh mozzarella
  • ½ cucumber large
  • ½ red onion small
  • 6 oz cherry tomatoes
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt & pepper

Method
 

  1. Cook the bulgur according to package instructions.
  2. In the meantime, chop the tomatoes, cucumber, and onion. Cut the mozzarella into small cubes.
  3. In large bowl, mix the bulgur, spinach, tomatoes, cucumber, onion, and mozzarella. Add olive oil, lemon juice, salt, and pepper, and toss everything together. Done!
