Cook the rice following the package instructions.
In the meantime, chop the onion and garlic, grate the ginger and cut the cauliflower and halloumi into bite-sized pieces.
In a large pot, boil the cauliflower for 4 minutes, then add the baby spinach and boil for 1 more minute. Drain and set aside.
Heat the oil in a frying pan over medium-high heat. Add the onion and fry until soft and translucent. Add the halloumi and fry for 5 minutes until golden.
Add the garlic, ginger, turmeric, and cumin, and fry for 1 minute, then add the rice, cauliflower, and baby spinach and toss everything together. Adjust the seasoning.
