Italian sausage pasta

Ingredients
  

  • ½ lb. Italian sausage
  • 8 oz fusilli or your preferred pasta, uncooked
  • 3 garlic cloves
  • ½ cup red wine or chicken broth
  • 1 tbsp tomato paste
  • 1 can chopped tomatoes
  • ½ tsp dried basil
  • ¼ tsp dried oregano
  • 1 tbsp olive oil
  • ½ cup pasta water
  • Grated Parmesan cheese for serving
  • Salt & pepper

Method
 

  1. Finely chop the garlic. Remove the casing from the sausages and chop them into pieces.
  2. Bring a pot of salted water to a boil. Cook the pasta according to package directions for al dente.
  3. Heat a frying pan over medium-high heat. Add the olive oil and fry the Italian sausage for 5 minutes or until cooked through stirring occasionally.
  4. Add the garlic and fry for 30 seconds. Stir in the tomato paste, add the wine, and cook for a couple of minutes until the alcohol evaporates.
  5. Add the canned tomatoes, dried basil and oregano. Season with salt and pepper. Reduce to low heat and let it simmer for 10 minutes. If it starts getting dry, add some of the pasta water.
  6. Add the pasta to the sauce, mix well and cook for a couple of minutes. Plate and grate some Parmesan cheese on top (and some fresh basil, if you wish). Done!
